22 - 1 garlic clove, finely minced
23 - 1/2 teaspoon salt
24 - 1/4 teaspoon ground black pepper

# How-To Steps:

01 - Preheat oven to 400°F (200°C).
02 - Rub chicken breasts with olive oil, cumin, paprika, salt, and pepper. Place on a parchment-lined baking sheet. Roast for 20 to 25 minutes until cooked through. Allow to rest, then slice into strips.
03 - In a saucepan, combine farro, water, and salt. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes until farro is tender. Drain any excess water.
04 - On a separate baking sheet, toss chickpeas with olive oil, cumin, and salt. Roast for 15 to 20 minutes until golden and slightly crispy.
05 - Whisk together tahini, lemon juice, water, olive oil, minced garlic, salt, and pepper until smooth. Add additional water as needed to achieve desired consistency.
06 - Divide cooked farro evenly among 4 bowls. Top with mixed greens, sliced roasted chicken, roasted chickpeas, cherry tomatoes, diced cucumber, and sliced red onion.
07 - Drizzle bowls generously with lemon-tahini sauce. Serve immediately while warm.

# Helpful Tips:

01 -
  • Its the kind of meal that makes you feel like you have your life together even when you absolutely do not
  • The sauce doubles as a dip for literally anything else in your fridge
02 -
  • The sauce will seem way too thick at first but keep whisking and adding water, it will suddenly emulsify into this gorgeous creamy dressing
  • Roasted chickpeas lose their crunch pretty fast so eat them the same day you make them for the best texture
03 -
  • Let the chicken rest for at least 5 minutes before slicing or all those juices will end up on your cutting board instead of in your bowl
  • If your tahini sauce seizes up and gets chunky, add warm water one tablespoon at a time while whisking vigorously and it will come back together
