# How-To Steps:

01 - In a small saucepan, whisk together 1 cup (240 ml) fresh lemon juice, 1 cup (240 ml) water and 1/2 cup (100 g) granulated sugar. Sprinkle 3 envelopes (0.75 oz / 21 g) unflavored gelatin evenly over the surface and let stand 2 minutes to bloom.
02 - Warm the saucepan over medium heat, stirring constantly until the sugar and gelatin dissolve completely; avoid boiling. Remove from heat and stir in the zest of 1 lemon. Allow the mixture to cool slightly for 2–3 minutes.
03 - Arrange 10–15 gummy bears in the bottom of each of six clear serving cups so they are evenly distributed.
04 - Carefully pour the warm lemonade-gelatin mixture over the gummy bears, dividing it evenly among the cups to avoid displacing the candies.
05 - Let the filled cups cool at room temperature for about 10 minutes, then transfer to the refrigerator and chill for at least 2 hours, or until fully set.
06 - Before serving, garnish each cup with fresh mint leaves and a lemon slice if desired. Serve chilled.

02 -
  • If you rush the bloom on the gelatin you’ll end up with pesky, chewy globs that never dissolve.
  • Adding cold gummy bears helps them hold their shape better and creates a fun, layered look in the finished cups.
03 -
  • Wet your knife with hot water before slicing jellies if you want perfect, clean-edged cubes for serving on platters.
  • Dissolve all the sugar and gelatin fully before pouring or the texture will come out grainy or uneven.
