# How-To Steps:
01 - Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots, sautéing for 4 to 5 minutes until softened.
02 - Stir in minced garlic and cook for 1 minute until fragrant.
03 - Pour chicken broth into the pot, add bay leaf and thyme, and bring to a gentle boil.
04 - Add chicken breasts to the broth, reduce heat, cover, and simmer for 15 to 18 minutes until cooked through.
05 - Remove chicken to a plate and shred using two forks into bite-sized pieces.
